What a lovely day we had yesterday! Fiddle lesson with our beloved former teacher. Shopping at Target and Hobby Lobby and the mall. And, best of all, lunch at one of our favorite places with some of our favorite people.
Here are a couple of recipes I promised our friends after we ate Greek fast food. We make Greek food ourselves, which is really better than what we get at the restaurant.
Hummus
1 (14-16 oz) can chickpeas, drained
2 T. Tahini paste (we substitute 2 T. toasted sesame seeds since we can't get Tahini)
2 T. fresh lemon juice
1 clove garlic, crushed
salt and pepper
olive oil and paprika
Put the chickpeas, Tahini paste or sesame seeds, lemon juice, garlic, salt and pepper in a food processor or blender and puree into a smooth paste, adding olive oil as needed to thin. Put hummus into a small bowl, drizzle with olive oil and sprinkle with paprika to garnish. Makes 1 cup dip. Serve with pita bread or pita chips or vegetables.
Couscous Tabouli
1 (10 oz) box of plain couscous, cooked according to directions on the box and cooled
1 T. olive oil to prepare couscous, plus 3 T. olive oil for dressing
2 T. fresh lemon juice
Salt and pepper
2 medium tomatoes, seeded and chopped
2 green onions, finely chopped
1 cup parsley, chopped
1/2 cup mint leaves, chopped
Mix together cooled couscous, 3 T. olive oil, lemon juice, salt, pepper, tomatoes, onion, parsley, and mint. Taste and adjust spices or dressing. Chill. Enjoy!
