We made this to go with hamburgers today, but it would be a good side dish for chicken, too.
Cajun Sweet Potatoes
3 pounds sweet potatoes, peeled and cubed
2 tablespoons olive oil
3 tablespoons brown sugar
1 teaspoon Cajun seasoning
1/2 teaspoon salt
1/8-1/4 teaspoon cayenne pepper (optional)
In a large bowl, toss the sweet potatoes and oil. Arrange potatoes in a single layer in two 15x10 baking pans coated with cooking spray. Bake, uncovered, at 450 for 20 minutes. Combine the brown sugar, Cajun seasoning, salt and cayenne; sprinkle over potatoes. Bake 5-6 minutes longer or until tender. Yield: 6 servings.
